Fresh spring rolls filled with bright vegetables and tofu dipped into a spicy sauce.

This recipe is a quick one to make and is vegan and gluten free.

Sometimes, a fresh bite that does not require any cooking makes for a great snack, appetizer or light meal!

For crunch, sweetness and color, carrot matchsticks and thinly shredded purple cabbage is a must for me in these spring rolls.

To make them a satisfying meal, I like adding tofu. It’s the perfect protein as well.

Romaine lettuce and herbs like basil, mint and cilantro make this vibrant green but also add lots of flavor.

With any fresh spring rolls, a dipping sauce is required.

I am keeping it light and fresh with a simple yet sweet and spicy olive oil based dipping sauce.

Chili garlic sauce and freshly chopped herbs pack a punch.

For a bit of acidity, fresh lemon juice makes the most sense here.

You can also substitute for fresh lemon juice.

To round out the flavors, a bit of salt and sugar are used.

Keep any leftover herbs for the spring roll filling.

Mix to combine and set aside.

Make the Spring Rolls

Add a bit of water to a large plate then dip the spring roll wrapper into the water for a few seconds until fully soaked.

Lay the softened spring roll wrapper flat on your working surface then add a few strips of carrot, cucumber, shredded cabbage, tofu, fresh herbs and romaine lettuce to the center of the wrapper.

Carefully fold 3 sides over the filling in the center then roll to seal.

Repeat with the remaining wrapper and filling.

Cut each spring roll in half, place onto a serving plate, garnish with toasted sesame seeds and serve with the herb dipping sauce.
