Make it a barbie summer with the pink dragon fruit margarita!

This drink is made in the blender and can easily be made into a big batch for a party!

Be sure to use pink frozen pitaya for that vibrant pink color.

The pitaya fruit you find in the product section may have a pink skin but the inside is mostly white.

Go to the frozen section of your grocery store and you will find it there.

Since this is a margarita, we are using tequila but you can also use your favorite mezcal!

Fresh lime juice is essential in any margarita. Try to avoid the lime juice that is jarred, get some fresh limes and squeeze them yourself as it will make a big difference!

For added flavor and sweetness, I am adding agave. A bit of simple syrup works as well.

To amp up the color even more and add a bit of creaminess to this drink, I like adding coconut cream!

Give it a try and see what you think.

When making a batch for party, add the coconut cream right before serving as it will separate while it sits in the fridge.
