Ingredients
Tomato Sauce
- 1 Tablespoon Olive Oil
- 0.25 cup, finely chopped Onion
- 1 Tablespoon Tomato Paste
- 0.5 teaspoon Red Pepper Flakes
- 2 cloves, minced Garlic
- 15 ounce can Tomato Sauce
- 1 teaspoon Salt
- 0.5 teaspoon Ground Black Pepper
Chicken Meatballs
- 1 pound Organic Ground Chicken
- 1/4 cup, finely chopped Onion
- 2 cloves, minced Garlic
- 0.3 cup Breadcrumbs
- 1 teaspoon Parsley
- 1 teaspoon Basil
- 1/4 cup, grated Parmesan Cheese
- 0.75 teaspoon Salt
- 0.25 teaspoon Ground Black Pepper
- 1 Egg
- 1 Tablespoon Flax Seeds
Topping
- 0.5 cup Shredded Mozzarella Cheese
- 0.25 cup Parmesan Cheese

I prefer my meatballs small, light and juicy.
To ensure that the meatballs are never dry, they should always finish cooking in a liquid, in this case tomato sauce, a homemade tomato sauce!
Don’t be intimidated to make this dish, it’s a 3 step process but the third step is sprinkling cheese on top…the best step *wink*!
Steps
1 Done | Make The Tomato SauceIn a pot, add 1 tbsp of olive oil and the chopped onion, sauté on medium heat for 3-4 minutes. Next, add the tomato paste and stir until all of the onion pieces are covered with the tomato paste, then add the minced garlic and cook until fragrant (about 1 minute). Add the tomato sauce, salt & pepper then allow the sauce to simmer on low while making the meatballs. If the sauce is splashing, cover the pot partially with a lid. |
2 Done | Make The Chicken MeatballsPreheat your oven to 400F. To make the meatballs, add all of the ingredients into a bowl and mix with a spoon or better yet, your fingers! Quick tip: lightly beat the egg before adding to the meatball mixture, it will make the mixing easier. I added the flaxseeds for nutritional value but this step is optional. |
3 Done | Brown The Chicken MeatballsHeat up a large skillet with some oil. Form the meatballs into walnut size and place them into the hot oil. Brown the meatballs on all sides on medium heat, about 1 minute per side. Browning the meatballs will enhance the flavor, don't fully cook them through at this point, they will finish cooking in the tomato sauce in the oven. You might need to brown the meatballs in two batches as your pan (and mine) might not be big enough. Remove the browned meatballs to a plate then start the second batch. |
