There is nothing more comforting than a bowl of easy spicy ramen noodles.

This recipe is made in one pot, only takes minutes to make and is vegetarian and vegan friendly.

Ramen noodles is a dish I crave often, especially during the cooler months.

I like keeping it simple with a spicy and flavorful broth that uses gochujang and gochugaru.

Gochugaru are Korean red chili flakes and gochujang is a fermented red chili paste!

These seasonings are slightly spicy, sweet and tangy.

For the broth base, a low sodium vegetable or chicken broth are great.

The secret to most recipes is to restrain from over seasoning, tasting the food while it’s cooking, then adding more salt or other seasonings as needed.

For a bit of body, fiber and crunch, I like dipping into pantry ingredients like canned water chestnut and canned hearts of palm.

Other ingredients that work well are frozen carrots, peas, broccoli, and corn!

Adding leftover meat is great as well.

For a bit of fat, I like adding butter towards the end and watch it melt into the sauce and coat the ramen noodles.

I’ve used both regular and vegan butter.

Alternatively, mayonnaise is also a great substitute.

Eating easy spicy ramen noodles with a side of kimchi and a soft boiled egg takes it up a notch.
