2 Tablespoons Vegan Mayonnaise
1 Avocado
4 leaves Romaine Lettuce
0.5 cup Sprouts
6 slices Cucumber
6 slices Tomato
10 Pickled Jalapeños

Fully loaded vegetable sandwich with 4 vegetables and 2 greens!

Some days, there is nothing better than a big sandwich with some chips on the side.

I much prefer veggie over meat sandwiches that still are very filling and provide healthy fats and nutrients.

This sandwich has the perfect balance of savory, crunchy, fatty and a hint of spicy from the pickled jalapeño!

To me, this sandwich is pretty perfect!

Other vegetables that are a great addition as well are carrot, spinach and red onion!

You can customize and build your own fully loaded vegetable sandwich by using up vegetables that you already have on hand.

The secret sauce to the best sandwich building is adding different colors and textures.

I love adding lettuce and sprouts for crunch, tomato for a hint of sweet, avocado and mayo for the creaminess, and jalapeño for that kick!

Toast The Bread Slices

Don't skip this step. Toasting the bread slices will make the sandwich more sturdy and will give it an added crisp factor.

Start With Healthy Fats

I love mayo but much prefer vegan mayo.

Add a bit of mayo to both slices then top with slices of avocado. I recommend 1/2 of an avocado per sandwich.

Add All The Veggies

Next, add the romaine lettuce, 3 slices of cucumber and 3 slices of tomato per sandwich.

Top with sprouts and pickled jalapeños. Add as much or as little as you like!

Now add the top bread slice and cut in half.

Serve with chips and/or pickles!

Yummy!! This is super nostalgic as it’s how I used to eat daily growing up, before heading to the beach or pool to sunbathe, lol — good memories! Love those sprouts. We also added marinated artichokes to ours! 🙂

Love all the colorful veggies — the rainbow variety is not only pretty, but so nourishing! A great at-home lunch for these times when we can’t get out!
