12 ounces Sweet Potato Gnocchi
3 Tablespoons Extra Virgin Olive Oil
1, sliced Shallot
1, finely diced Zucchini
2, finely diced Tomato
1 teaspoon Sea Salt
0.25 teaspoon Ground Black Pepper
2 Tablespoons, sliced Fresh Basil Leaves
0.25 cup, grated Parmesan Cheese

Sweet Potato Gnocchi with Vegetables

This bowl of sweet potato gnocchi with vegetables is a great mid-week meal that comes together quickly!

Don’t get me wrong, making gnocchi at home is pretty simple but it is very messy.

This is why I opt for my store-bought gnocchi options.

Gnocchi are an Italian pasta and most commonly made with potato, flour and eggs.

There are different varieties of gnocchi available including ricotta, cauliflower, spinach, sweet potato, are more!

I love this recipe as it falls under the “let me be lazy” weeknight dinner and it only takes a handful of ingredients and less than 20 minutes!

Gnocchi are great for this as they only take a couple of minutes to cook!

Once the gnocchi float, they are fully cooked and ready.

For the vegetables, you can use whatever you have on hand!

I like using shallot, zucchini and tomato.

The vegetables are sauteed in a skillet with extra virgin olive oil and season with salt and black pepper.

To sauce is a mixture of the olive oil with the juices of the vegetables and a bit of the cooking liquid from the gnocchi.

That cooking liquid is salted and contains starch from the gnocchi which helps with binding the sauce when it’s tossed with the ingredients.

Get a Large Skillet

Heat skillet on medium-high heat then add extra virgin olive oil and the sliced shallot.

Sauté for a couple of minutes then add diced zucchini, diced tomato.

Sauté on medium heat until veggies are soft then season with salt and black pepper.

Turn off the heat and cover to retain the heat.


Cook The Gnocchi

Fill a small pot with water then cover and bring to a boil.

Once at full boil, season the eater with 2 teaspoons of salt.

Gently drop in the sweet potato gnocchi and cook until the start to float.

This should only take 2-4 minutes.


Add the Gnocchi to the Skillet

As the gnocchi start to float, transfer the gnocchi to the skillet with the vegetables using a slotted spoon.

Add about 1/3 cup of the gnocchi cooking water to the skillet and gently stir to combine the gnocchi with the vegetables.

Add fresh basil and grated parmesan, if desired then serve.
