1 cup Strawberries
15 ounce can Full Fat Coconut Milk
6 Tablespoons Agave/Maple Syrup
1 Tablespoon Chia Seeds
1 Lemon
Avocado & Lime Popsicle
1 ripe Avocado
15 ounce can, divided Full Fat Coconut Milk
6 Tablespoons, divided Agave/Maple Syrup
1 Lime

Who doesn’t love ice cream or popsicles during the hot summer days?

Though the bad news is that ice cream has a lot of sugar and fat, so I am always looking to create a healthier alternative.

Here are two easy, yummy and creamy popsicle recipes.

Avocado and lime popsicles and strawberry and chia seeds popsicles.

Both popsicle recipes are vegan and dairy-free as I am using full-fat coconut milk as the base.

If you do not own a popsicle mold, you can still make these mixtures and add them to a parchment lined freezer safe dish and freeze them (covered) for 8 hours. Once frozen, use a warm spoon or ice scream scoop to serve!

Strawberry & Chia Seeds Popsicle

Add all of the ingredients (except chia seeds) to a blender and blend.

Next, add the chia seeds to the mixture and use a spoon or spatula to mix them in.

Fill up the popsicle molds with your mixture and freeze for at least 8 hours.

Avocado & Lime Popsicle

Start by adding the avocado and the zest and juice of 1 lime to a blender and blend until combined.

Next, add 1 cup of coconut milk, and maple syrup/honey to the avocado mixture in the blender and blend until combined.

Fill up the popsicle molds 3/4 of the way up. To add the layer of sweet coconut milk, mix the remaining coconut milk and 1 Tablespoon of maple syrup/honey and top off the molds.

Lastly, add the wooden sticks and freeze for at least 8 hours! This popsicle is great balance of creamy, lime-y and sweet.

Freeze for at least 8 hours.
