Cute and sweet strawberry sugar cookies that are perfect for a Valentine’s or Galentine’s get-together!

I don’t know about you, but around here, everyone loves a cookie. For any occasion.

When Valentine’s Day comes around, we look forward to red and pink foods, gifts and treats.

These cookies are so easy to make and are the perfect combination of sugar and strawberries.

To get that pink hue, strawberry puree is added to the cookie dough.

For that strawberry visual cue, I like adding frozen and thawed strawberries.

Using frozen and thawed versus fresh strawberries is the way to go as frozen and thawed fruit has less water and a more concentrated berry flavor.

Lastly, for that special holiday look, I like adding a strawberry sugar dust on top of the cookies when they come out of the oven.

The sugar dust is freeze-dried strawberries that are milled down into a powder then mixes with granulated sugar.

I like using my food processor for this as it’s the easiest and fastest way to make it into a powder.

Steps

1
Done

Make Cookie Dough

Preheat the oven to 350°F and line a large baking sheet with parchment paper.

In a large mixing bowl whisk together the all-purpose flour, cornstarch, baking powder, and salt.

Using an electric mixer or standing mixer with the paddle attachment, mix together the softened butter and sugar for 5-7 minutes or until pale in color.

Next, add the egg and mix well until incorporated.

For the strawberry flavor, add strawberry puree. Mix until combined.

Next, add in the flour mixture and mix until combined.

Using a rubber spatula, fold in the thawed and finely chopped strawberries.

Bake The Cookies

Scoop the cookie dough into even size balls using a large spoon or a cookie scoop and place onto the parchment lined baking sheet.

Be sure to leave room in between each cookie dough ball to allow even heat distribution and spreading throughout baking.

Bake the cookies in the preheated oven for 15-18 minutes then allow to cool on the baking sheet.

3
Done

Add Berry Sugar Dust

Combine crushed freeze dried strawberries and sugar, a small food processor is best for this, then sprinkle the cookies with the berry sugar dust and serve.
