Directions
This easy roasted miso maple butternut squash dish makes for a great side dish to any fall and winter dinner menu!
I love hands-off roasting recipes that are easy to make and require little effort.
The oven does all of the work as it cooks the squash and perfectly marinates it at the same time.
Adding real maple syrup to your vegetables make so much sense as it adds the perfect amount of sweetness.
Miso paste, particularly white miso, adds a savory note as well as umami.
It is a magical ingredient and adds umami to any dish and is very versatile.
This salty paste is made with a cultured mixture of fermented soybeans, a grain (like rice or barley), salt, and koji.
There are more than 1,000 types of miso, ranging in texture, flavor, and color. My favorite is white mellow miso, this is the miso I am using in this recipe.
Once the miso maple seasoning mixture is made, it’s lathered all over the squash then roasted.
For a nice garnish touch and a bit of crunch, I like adding both black and white sesame seeds.
Fresh parsley adds that beautiful green and that herby aspect.
