7 leaves Kale (any variety)
1 Green Apple
1 Cucumber
Orange Juice
1 Orange
3 Carrots
1 knob (1 inch in length) Fresh Ginger Root
Yellow Juice
1 Yellow Bell Pepper
1 Lemon
1 Grapefruit
Purple Juice
1 Red Beet
3 stalks Celery
1 Lemon

Fruit and vegetable rainbow juices that are packed with vitamins and hydration.

Ever heard of the expression ‘eat the rainbow’? How about DRINK the rainbow?

I’ve been into fruit and vegetable rainbow juices for many years now but tend to make smoothies more often for convenience.

When I do feel like having a vibrant and full of nutrients juice, I make one of these four juices.

All four juices are just 3 ingredients each! I like to keep it simple and pair the ingredients that compliment each other.

 

A bit about the health benefits:

Green Juice (kale, apple, cucumber): Both the kale and green apple are high in fiber which is great for digestive health. Cucumber keeps you hydrated and helps flush out toxins.

Orange Juice (orange, carrot, ginger): As most of us know oranges are an excellent source of vitamin C which helps boost immunity. Carrots protect eye health and are a great source of antioxidants. Ginger is among the healthiest spices on the planet. It has powerful anti-inflammatory and antioxidant effects and can help lower blood sugars and improve heart disease risk factors.

Yellow Juice (yellow bell pepper, lemon, grapefruit): Yellow bell peppers are sweet and contain fiber, protein and iron. Lemon and grapefruit help to boost levels of vitamin C in your body.

Purple Juice (red beet, celery, lemon): Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium. These are all good for our bones, liver and kidneys. Celery is an excellent source of antioxidants and has beneficial enzymes. It also contains vitamins K, C, potassium and folate.

Green Juice

Wash the kale and apple.

As I buy organic produce I do not peel the apple or cucumber.

No need to remove the kale stems either.

Cut the apple in half and add to the juicer.

Add 3-4 leaves of kale at a time and add the cucumber in whole.

If you are using a high-speed blender, blend everything on high then strain using a fine mesh strainer.

This makes 1 serving.

Orange Juice

Peel the orange and cut in half.

Wash the carrots and keep whole.

I do not peel the carrots to keep it easy.

I also toss in the knob of ginger into the juicer as is.

If you are using a high-speed blender, cut the ginger in half.

Blend everything on high then strain using a fine mesh strainer.

This makes 1 serving.

Yellow Juice

Wash the yellow bell pepper and cut in half then remove the stem.

Peel the lemon and grapefruit.

Cut the grapefruit in half.

Press everything through your juicer.

If you are using a high-speed blender, blend everything on high then strain using a fine mesh strainer.

This makes 1 serving.

Purple Juice

Peel the beet and lemon and wash your celery.

Press everything through your juicer.

If you are using a high-speed blender, blend everything on high then strain using a fine mesh strainer.

This makes 1 serving.

How To Store Leftovers

When juicing, you can make extra and store them in glass jars with an air-tight lid in the refrigerator for up to 3 days.

Any leftover vegetable fiber will separate from the juice water naturally as it sits. Simple give the juice a shake before serving.

I love the simple ingredients! I shy away from juicing most of the time because of the time factor and a busy house – these look much easier to manage!

This reminds me of the Skittles marketing phrase TASTE THE RAINBOW! Except, this is the rainbow I’d much rather taste! YUMMY!

So refreshing and colorful! I really love beet juice, despite the fact that I don’t like cooked beets, so I’ll need to give this version a whirl.

This is so gorgeous! I love the idea of yellow pepper in the yellow juice – I’ve never thought to use peppers in my juicing.
