Ingredients
- 6 ounces Raspberries
- 6 ounces Blackberries
- 2 cups, roughly chopped Spinach
- 2 cups, roughly chopped Romaine Lettuce
- 0.25 cup, thinly sliced Red Onion
- 0.3 cup, crumbled Feta Cheese
- 0.25 cup, chopped Pistachios
- 1, juiced Lemon
- 2 Tablespoons Extra Virgin Olive Oil

Berries are my favorite fruit which is why I love this mixed berry salad.
This salad is easy to make, has 7 ingredients and a simple lemon and extra virgin olive oil dressing.
Berries are loaded with antioxidants, high in fiber and vitamins!
I am using feta cheese for some added fatty-ness and a creamy element. You can use high-quality feta in brine and crumble it yourself, crumbled or even vegan feta cheese!
Adding nuts to salad is also great. For this mixed berry salad, I love using pistachio. The color is beautiful and vibrant and the flavor pairs well with the berries.
You can also add walnuts or pecans!
Pistachio nuts are not only tasty and fun to eat, but also highly nutritious.
They are loaded with nutrients, high in protein, so delicious and fun to eat!
Red onion that are thinly sliced into half moons is a must for me. It gives the salad another level of umami and sweetness.
If you are not a fan of onion, try green onion also known as scallion.
For greens, I am using a combination of spinach and romaine lettuce. Kale that has been massaged would also be lovely.
Steps
1 Done | Make the SaladWash and dry the berries. Wash, dry and roughly chop the spinach and romaine lettuce. Thinly slice the red onion and roughly chop the pistachio. Add the prepped ingredients to your salad platter or bowl then top with crumbled feta cheese, the juice of a lemon and extra virgin olive oil. Lightly toss and serve. Store any leftovers in the refrigerator for up to 3 days. It's best to store the salad without the dressing. |
