Ingredients
- 4 Avocados
- 4 Limes
- 0.3 cup, finely chopped Red Onion
- 1 Corn on the Cobb
- 1, finely chopped Jalapeño
- 0.5 cup, chopped Cherry Tomatoes
- 1 Tablespoon Avocado Oil (optional)
- 1 teaspoon Kosher Salt
- 0.3 cup Pepitas
- 0.25 cup, finely chopped Fresh Cilantro
- 0.25 cup, finely chopped Fresh Chives

Not that we need a reason to make guacamole but when it is Football season and one of the best things to snack on while rooting on your team is guac!
The golden rule to making perfect guacamole is using good, ripe avocados. Add some lime juice, salt, and then it’s pretty much customizable from there!
I love this loaded version as each ingredient compliments the guacamole oh so well!
The pepitas (pumpkin seeds) gives it crunch, the cherry tomatoes and corn that fresh sweetness and color, jalapeños for some spiciness and the herbs round it all out!

Steps
1 Done | Get a large bowlWith a sharp knife, cut your avocados lengthwise then twist to pull the halves apart, remove the pit, scoop out the flesh and add it to your bowl. Keep one of the pits to add to the guacamole later to keep it from browning! Next, add the lime juice, avocado oil, salt and finely chopped red onion and mash with a fork. For the jalapeño, cut lengthwise and scoop out the seeds, unless you like it really spicy, then chop finely and add to your bowl. You can cook or grill your corn but during the summer when corn is in season, I prefer it raw and cut it straight off the cobb. Add the corn kernels, chopped cherry tomatoes, chopped cilantro and chives and give it a stir. Give it a taste and adjust seasoning with more salt if necessary. Lastly, add the pepitas and give it one last gentle stir. |

I love guacamole anyway I can get it–but with pumpkin seeds? That is so new to me and I can’t wait to try!
