0.3 cup Pumpkin Seeds
1 teaspoon (or more) Tajín
1 Tablespoon, finely chopped Fresh Cilantro

Sweet, spiced and fully loaded corn dip.

A corn dip must be eaten with corn chips of course. I love the round, thicker chip that are perfect for scooping.

This recipe only requires 6 ingredients, is dairy free and incredibly addictive.

As far as I can remember, I’ve always loved corn. It’s sweet, refreshing and so versatile.

I always have frozen corn on hand, regular and fire roasted.

For this recipe, I prefer the fire roasted kind but any kind of corn works great!

These pretty little yellow kernels are also rich in vitamins and beneficial nutrients.

Corn is high fiber and it can aid with digestion. It also contains valuable B vitamins, which are important to your overall health.

This vibrant vegetable also provides our bodies with essential minerals such as zinc, magnesium, copper, iron and manganese.

I do recommend buying USDA organic corn as the generic kind is most likely GMO.

To make this a loaded corn dip, I like adding a few colors and textures.

As with most of my recipes, this one is also customizable, so feel free to add other vibrant vegetables, nuts or seeds.

Quick Prep

I love buying frozen corn and quickly thawing it out in a small sauce pot over medium heat. You can also use fresh corn!

Peel, then finely dice the red onion, roughly chop the pumpkin seeds and prep the other ingredients.

Make The Dip

Add all of the ingredients to a bowl and mix until combine. Taste and add more tajín is desired.

Serve with corn chips and enjoy!

Store any leftovers in an air-tight container in the refrigerator for up to 4 days.
