pinch Flaky Sea Salt
small handful Fresh Basil Leaves

This 3-ingredient, simple heirloom tomato and pesto salad is beautiful, vibrant and so delicious.

In the summer time, I love enjoying seasonal produce and consume them in their peak form – as they are!

You have not tasted a tomato under you’ve had a fresh and ripe heirloom tomato in the summer.

Not every salad requires lettuce or greens.

To dress up the beautifully sliced tomato a bit, I like to dollop small amounts of green basil pesto.

The pesto replaces the dressing in this simple salad.

Keep is simple by getting your favorite genovese or vegan pesto or make it homemade!

For added texture and a bit of healthy fats, I love adding toasted pine nuts.

Simply toss pine nuts into a dry skillet and toast on medium heat until fragrant.

Be sure to shake the skillet every now and then to avoid the nuts from burning.

The higher the fat content in the nut, the easier they are to burn!

Alternatively, you can also add chopped walnuts, pumpkin seeds, or any nut or seed you like.

Get a Serving Platter

Wash, dry then slice the tomatoes and place them onto a serving platter.

Dollop with your desired pesto and sprinkle over the toasted pine nuts.

Optionally, sprinkle with a bit of flaky sea salt and fresh basil leaves.
