4 Bread Slices
1.5 cups (I use unsweetened Almond Milk) Non-Dairy Milk
1 Tablespoon Chia Seeds
1 Tablespoon Ground Flaxseeds
0.25 teaspoon Turmeric Powder
0.25 teaspoon Ground Black Pepper
0.5 cup Blueberries
Real Maple Syrup
1 Tablespoon (for pan frying) Coconut/Sunflower Seed/Grapeseed Oil

This healthy french toast is not only pretty and delicious but it is also 100% vegan!

You won’t find any eggs or dairy in my french toast.

Although I am more of a savory breakfast person, having a sweet French toast that is perfectly golden brown and crispy on the outside with a custardy middle is pure heaven!

The best bread to use for French Toast is a soft and slightly stale slice.

I am using a multigrain loaf but you can use whatever you have on hand and like.

What makes this french toast healthy are the superfood seeds and turmeric!

The seeds help with thickening the outer coating of the french toast, they replace the egg and also add texture and nutrition.

Chia seeds are among the healthiest foods on the planet. They’re loaded with nutrients that can have important benefits for your body and brain.

Grown since the beginning of civilization, flax seeds are one of the oldest crops. There are two types, brown and golden, which are equally nutritious.

In order for your body to be able to absorb all of its nutrients, the seeds must be ground.

Just one tablespoon provides a good amount of protein, fiber and omega-3 fatty acids, in addition to being a rich source of some vitamins and minerals!

Why do I add turmeric you might ask?

Other than adding that beautiful yellow tint, which would traditionally come from the egg yolk, the spice has major benefits for your body and brain. Many of these benefits come from its main active ingredient, curcumin.

Adding a tiny bit of black pepper helps the body absorb those benefits.

Just like with pancakes, I love my French toast with blueberries.

I add them to the skillet as the French toast cooks. Through the heat, the blueberries burst open and create a runny jam like result!

Quick Prep

Slice your bread - medium to thick slices is best.

Get all of the other ingredients out and ready.

Make Soaking Liquid

To a bowl add the non-dairy milk, chia seeds, ground flax seeds, turmeric and black pepper.

Whisk to combine then allow to sit and thicken for 5-10 minutes.

Next, dip each slice int the liquid making sure both sides are completely coated.

Move the soaked bread slices to a tray or plate.

Pan Fry

Heat a large non-stick skillet over high heat and add a bit of oil, I am using coconut oil.

Once hot, turn the heat to medium and add the soaked bread slices.

After a couple of minutes, add the washed blueberries.

Flip the French toast slices after 3-4 minutes or until the golden brown on both sides.

Serve

Serve the French toast hot with the hot blueberries and all of its juices.

Drizzle with a bit of maple syrup and ejoy.
