Ingredients
- 1 pound Ground Turkey
- 0.3 cup, chopped Onion
- 2 Garlic Cloves
- 2 Golden Beet Root
- 1.5 cups, chopped Green Beans

- 1.5 cups Filtered Water
- 1 cup Milk
- 0.3 cup Frozen Peas
- 0.25 cup Bean Sprouts (optional)
- 0.25 cup Parmesan (optional)

The perfect mid-week dinner is a creamy and cheesy ground turkey cheese risotto.

For this dish, I recommend using the Four Cheese Risotto.
The White Cheddar Broccoli, Roasted Garlic Alfredo, or Spinach & Artichoke and Asiago Cheese are also great.
I’ve paired this cheesy risotto with a lean protein, ground turkey.
To add more nutrients color and texture, I love adding vegetables.
Here I added bright colored greens beans, peas and golden beets.
Carrots and broccoli also work really well.

Steps
1 Done | Cook The Ground TurkeyIn a large skillet with high sides, add 1 tbsp of olive oil and turn the temperature to medium. Once the skillet is hot, add the chopped onions and sautee for 1 to 2 minutes. Next, add the ground turkey and cook for 5 minutes, stirring occasionally. Next, add the minced garlic and continue to cook the meat until there is no more pink left. About another 5 minutes. Once the ground turkey is cooked, move the meat to a bowl. |
2 Done | Cook The VegetablesWash, peel and chop the golden beets into bite-size pieces. Also, wash and chop the green beans. Move the frozen peas to a bowl and allow them to thaw slightly. To the same (dirty) skillet, add about 1/2 tbsp of olive oil and bring it to medium heat. Add the chopped beets, sprinkle with some salt and pepper and sauté for about one minute. Next, add a splash of water (2 tbsp), then cover the skillet and allow the beets to steam. After about 4 minutes, remove the lid, add the green beans, stir and cover again. Cook until the beets and green beans are done, about 2-3 minutes. Once the veggies are fork tender, move them to a bowl. |
3 Done | Make The RiceI used the Four Cheese Risotto, be sure to follow the instructions with exact measurements listed on the packet. Add 1 packet of Knorr Selects to your skillet with 1 1/2 cups water, 1 cup milk (any milk will do, I used oat milk!), and 2 tbsp of olive oil. Stir then over the skillet and bring it up to a gentle boil. Once at a boil, remove the lid and allow to cook for 10 minutes, stirring occasionally. After 10 minutes, add the cooked ground turkey and veggies to the skillet and stir. Adjust the seasoning if necessary with a bit more salt and pepper. Add freshly grated parmesan as well as bean sprouts for crunch, if desired. |
