Colorful and playful grilled summer vegetables with a lemon flax oil vinaigrette that is sweet, savory and slightly smokey.

You heard that right! Flax oil is all the rage this summer and you need to get yourself a bottle stat!

Flaxseed oil is high in omega-3 fatty acids and has been shown to have several health benefits, such as reduced blood pressure and improved regularity.

What’s more, flaxseed oil can be used in a variety of ways. It can be used as a replacement for other types of oils, added to foods or applied to your skin and hair.

Carrington Farms Flax Cooking Oil is cold pressed and works great in everything from stir-fry to roasting!

Fry with it, bake with it or sauté vegetables – an excellent alternative to butter, canola or olive oil.

But as with most recipe, you need a sauce which is why I am pairing these grilled summer vegetables with the lemon flax oil vinaigrette!

Heat Grill & Prep Vegetables

Heat a grill to medium heat and wash and cut the vegetables into desired shape.

Lightly toss the cut vegetables with 1-2 Tablespoons of Carrington Farms Organic Flax Cooking Oil and season with sea salt and black pepper.

Grill The Vegetables

Grill on each side for 3-5 minutes or until lightly charred then place onto a serving platter.

Make The Lemon Flax Oil Vinaigrette

To a small jar, add the Carrington Farms Organic Flax Cooking Oil and the remaining vinaigrette ingredients then seal tight with a lid and shake well until emulsified.

Serve

Pour the lemon flax oil vinaigrette over the grilled veggies and garnish with fresh basil leaves.
