0.5 cup Almond Flour
0.5 cup Rice Flour
1 cup Oat Flour
0.5 cup Unsweetened Cocoa Powder
1 teaspoon Baking Powder
0.5 teaspoon Kosher Salt
Wet Ingredients
0.5 cup Virgin Coconut Oil (melted)
1 cup Honey/Maple Syrup
0.5 cup Almond Butter
2 Eggs
Fun Stuff
0.3 cup Dark/Semi-Sweet Chocolate Chips
0.25 cup Chopped Nuts (Almonds & Pecans)

Cakey brownies that are full of nuts, chocolate but NO gluten!

I am finding that more and more people around me are sensitive to gluten.

My brother in law definitely has a gluten allergy but still treats himself to some bread or pasta once in a while but always ends up with stomach pains.

Another friend of mine avoids gluten all together. And every other fitness trainer in Los Angeles considers gluten to be “the devil.”

Whatever the case, we need more delicious, gluten free recipes out there!

I tasked myself with creating a recipe and it wasn’t as easy as I thought. However, the results were incredible!

If you don’t have gluten, insert chocolate and all is forgiven in the world. Add some nuts in there too and it’s healthy!

Here is how to make this recipe vegan. Swap out the eggs for flax eggs, use maple syrup and vegan chocolate chips. For the flax eggs,
combine 2 tbsp ground flax seeds with 5 tbsp of water and allow it to sit and thicken for about 10 minutes.

Mix Dry Ingredients

Preheat the oven to 350F.

Grab a large bowl and using a sifter, combine all of the dry ingredients. Set aside.

Mix Wet Ingredients

Using your blender or food processor, mix all wet ingredients until smooth.

Combine Wet And Dry

Using a rubber spatula mix the wet ingredients into the dry and well combined.

Usually, over mixing in a baking recipe is not recommended because it can create gluten but in this case, mix away, no gluten in sight!

You can now mix in your chocolate chips.

Top with Nuts and Bake

Grease your baking dish with coconut oil and line the inside with parchment paper.

Spoon in your brownie batter into your baking dish and smooth the top with your rubber spatula or a spoon.

Now, top with the chopped nuts and bake at 350F for 30-35 minutes, or until a tooth pick comes out mostly dry.

Serve

Allow the brownies to cool for about 10-15 minutes before removing it from the baking dish, slice and serve!
