Ingredients
- 1 pound French Green Beans
- 1 Tablespoon Extra Virgin Olive Oil
- 0.5 cup Vegetable Broth
- 1 pound Yukon Gold Potatoes
- 1 cup Dairy Free Milk
- 6 Tablespoons Butter (I use vegan butter)
- 1 Tablespoon Mustard
- 1.5 teaspoons Sea Salt
- 1 teaspoon Ground Black Pepper
- 1 cup Vegan Mushroom Gravy
- 1 cup Cranberry Sayce

These French beans with creamy mashed potatoes are a must for your Thanksgiving meal!
These two recipes are easy to make and fully vegan but if you like a bit of dairy you can use regular butter and milk!
For the dairy-free options, I like salted vegan butter sticks and a creamy oat or almond milk.
Though you can use any kind of potato to make mashed potatoes, I prefer yukon gold potatoes.
French green beans are one of my favorite vegetables.
Unlike green beans, French beans are more slender and slightly more tender.
Often times, they also do not require the ends to be trimmed before cooking.
French beans and green beans area good source of dietary fiber and can help regulate sugar, improves heart health and bone health.
In this recipe, the French beans are cooked in the skillet with a steam and sear method.
This results in a fully cooked vegetables that is tender but still has crunch!
Whatever your main protein may be, adding French green beans, creamy mashed potatoes, cranberry sauce, and gravy makes it a complete holiday feast!
To make things easier, I sometime opt for a store-bought vegan gravy but you can also make it homemade.
For the cranberry sauce, homemade is best as well but this is a judgment free zone!

Steps
1 Done | Boil The PotatoesWash and peel the potatoes then add them to a large pot and fill with water making sure potatoes are fully submerged. Cover the pot and bring to a boil. Once at a boil, remove lid and cook potatoes until very fork tender then drain the potatoes. |
2 Done | Make the French BeansWhile the potatoes are cooking, make the French beans. Heat a large skillet on high heat then add the French beans and season with 1/2 teaspoon of salt and 1/4 teaspoon black pepper and add the vegetable broth. Stir to combine then cover and simmer on medium heat for 8-10 minutes or until the French beans are tender. |
3 Done | Make the Creamy Mashed PotatoesAdd the drained potatoes to a large bowl and mash well. Next, add the milk, mustard, butter, salt and black pepper. Mash again until well combined and creamy. Add more milk, if needed. |
4 Done | ServeTo serve, add the creamy mashed potatoes to a plate then top with the French beans. Drizzle with gravy and serve with cranberry sauce if desired. |
