Fancy looking chocolate truffles with only 3 ingredients plus your desired fillings!

These chocolates come together in minutes, are made in an ice cube tray and then frozen.

You can customize them however you want with fillings like peanut butter, chopped nuts, coconut, dates and more!

I have made these truffles vegan by using dairy free semi-sweet and dark chocolate chips.

To get a bit of a marbled effect on the outside, use two types of chocolate chips and melt them separately.

I had seen the ice cube tray trick somewhere on social media so I cannot take credit for this invention.

The food science that happens when melted chocolate and melted coconut oil are combined and chilled it pure magic!

It’s much easier than trying to pull a Claire Saffiz when she is trying to temper chocolate. IYNYK.

These homemade and super easy to make truffles only require one somewhat ‘hard’ step – melting the chocolate!

You can use your microwave and melt the chocolate chips or chunks in 20 second increments until the chocolate is almost fully melted.

Chocolate can burn very easily so once it’s 80% melted, you can stir the hot chocolate  and the residual heat will melt the remaining chunks.

Another option for melting chocolate is using the doubler boiler method.

Add a couple of inches of water to a small pot then place a heat-safe and preferably thick glass bowl on top of the pot then turn the heat to medium-high until the water starts to simmer.

Add the chocolate chunks or chips then stir every 20-30 seconds until the chocolate is melted.

Be sure to use a kitchen towel to remove the bowl from the pot and set it onto another kitchen towel.

Avoid any of the steam to be incorporated into the melted chocolate as that can ‘curdle’ the melted chocolate.

One of my favorite fillings for these chocolate truffles is peanut butter.

I am also adding dates, chopped nuts and shredded coconut.

Goji berries and other dried fruits also make for great fillings!

3 Base Ingredients

To make the chocolate, you will just need 3 simple ingredients.

Chocolate chips, coconut oil, and a tiny bit of sea salt.

Melt The Chocolate Chips

Add 2 cups of chocolate chips to a microwave safe bowl or jug along with 3 Tablespoons of coconut oil and only 1/4 teaspoon (a pinch) of sea salt.

Heat in the microwave for 20 seconds then stir, repeat 3 more times making sure to stir each time after 20 seconds in the microwave.

Fill The Ice Cube Tray

Start by drizzling some of the melted chocolate mixture into each ice cube tray, about 1/4 of the way full.

Next, add about 1 teaspoon of your desired filling.

Top with more melted chocolate making sure to cover everything well and evenly.

Freeze

Place the ice cube tray into the freezer for about 1 hour.

Invert the Ice Cube Tray

The chocolate truffles should come out easily, if not, give the tray a light twist until all of them fall out.

Store

Store the chocolate truffles in the refrigerator in an air-tight container for up 2 weeks.
