2 cups Non-Dairy Milk
Date Caramel
1 cup Medjool Dates
3 cups Hot Water
1 teaspoon Pure Vanilla Extract
0.25 teaspoon Salt

These cute and nutritious chia seed pudding with date caramel cups make for a great snack, breakfast and healthy dessert!

Chia seeds are among the healthiest foods on this planet as they are loaded with nutrients.

They contain fiber, protein, manganese, magnesium and more.

These powerful seeds are loaded with antioxidants, are high in omega-3 fatty acids and many other important bone nutrients.

Storing them in the refrigerator will extend the shelf life of your chia seeds!

Be sure to store them in an air-tight container to keep moisture out.

To make the chia seed pudding, you will need a liquid.

I love using oat or almond milk but you can also use coconut or dairy milk to make the pudding.

Since chia seeds do not contain any flavor, I love making date caramel and layering the two.

Date caramel is so easy to make, perfectly sweet and refined sugar free.

When buying dates, look for plump and soft dates.

Medjool dates are very common in grocery stores and always a great choice!

Make the Chia Seed Pudding

Add chia seeds and non-dairy milk to a bowl and whisk well.

Cover and refrigerate for 20 minutes or until the chia seeds have plumped up to a pudding like texture.

Make Date Caramel

Remove pits from the dates then place into heat safe bowl.

Cover the dates with hot water and allow to soften for 10 minutes.

Next, drain the softened dates and add to a blender along with the vanilla extract and salt.

Blend then add a bit of nut milk to achieve desired consistency, 1 Tablespoon at a time.

The date caramel should be smooth.

Assemble

To assemble add some of the chia seed pudding to jars or bowls then add a layer of date caramel and top with a bit more chia seed pudding and garnish with fresh fruit.

Serve immediately or cover and store in the refrigerator for up to 4 days.
