The bees knees cocktail is simple, refreshing and sweet!

Every heard of the phrase “you’re the bees knees”?

This drink is from the Prohibition era.

It’s made with gin, fresh lemon juice, and honey syrup and served shaken and chilled, then garnished with a lemon twist.

The name comes from prohibition-era slang meaning “the best”.

An elegant, tart and sweet cocktail that has just 3 ingredients and can also be made as batch drink for a crowd.

Traditionally made with gin, the bees knees would also work with vodka.

Fresh lemon juice is essential for this cocktail.

The acidity cuts through the sweetness of the honey and compliments the gin.

For the honey syrup, simply combine equal parts honey and hot water.

Though most say not to shake gin, I prefer this drink shaken as it cools and aerates the drink.

If you do not have fancy cocktail tools, simply use a glass jar with an air-tight lid!

Make The Honey Syrup

Add 1/4 cup of honey to a heat safe jar then bring 1/4 cup of water to a simmer.

Add the hot water to the honey and mix well until combined.

Set aside and allow to cool.

Get a Cocktail Shaker

To a shaker add ice cubes, 2 ounces of gin, 3/4 ounce of fresh lemon juice and 1/2 ounce of the cooled honey syrup.

Shake well for at least 30 seconds.

Strain & Serve

Pour the drink into your cocktail glass with a strainer.

Garnish with a slice of lemon or lemon peel and enjoy.
