A humble yet fancy breakfast sandwiches are these bacon egg and cheese biscuits!

Make is a special weekend morning with these delicious and freshly baked biscuits topped with cheesy scrambled eggs and bacon.

This recipe is easy to make as the oven takes care of the biscuits and bacon at the same time and all you can to do is scramble some eggs in a skillet then top with cheese.

I love sharp cheddar cheese for this recipe but you can use any cheese you like!

When I have the time and am in the mood, I make the biscuits from scratch but most of the time, I will reach for store-bought raw biscuit rolls that bake up in the oven in minutes.

My favorite way to cook bacon is laying them out on a large baking sheet lined with a lot of aluminum foil for easy clean up!

The bacon cooks in the oven at a high temperature.

Once the bacon comes out of the oven, I immediately transfer them to a large paper towel lined platter to absorb excess oil and allow them to get crispy.

For the scrambled eggs, use a non-stick skillet and allow it to preheat for about one minute.

Then add the butter or oil, the whisked eggs, salt, and black pepper and using a heat-safe silicone rubber spatula to stir and scramble the eggs.

For a bit of a fresh element, chives are great! You can also add dill or parsley.

Leave you review for these bacon egg and cheese biscuits below.

Steps

1
Done

Turn on the Oven and Grate the Cheese

Preheat the oven to 420°F.

Add the strips of bacon in one even layer onto a parchment or aluminum lined baking sheet and place the frozen biscuits onto a second parchment lined baking sheet.

Once the oven is preheated, add both the biscuits and bacon to the oven for 15-20 minutes or until biscuits are golden brown and the bacon is fully cooked and crispy.

While those are in the oven, grate the cheddar cheese and set aside.

Once the biscuits and bacon are done, remove from the oven and allow to cool.

For the bacon, using tongs, move them to a large paper-towel lined plate or platter to soak up excess fat.

Make The Scambled Eggs

Crack the eggs into a bowl and whisk well.

Heat a non-stick skillet on high heat and melt the butter.

Lower the heat to medium-low then add the whisked eggs and season with salt and black pepper.

Using a wooden or rubber spatula, scramble the eggs until cooked to your liking.

Turn off the heat then sprinkle the grated cheese on top and cover to melt the cheese.

3
Done

Build the Breakfast Sanwiches

To build the bacon egg and cheese biscuits, slice the biscuits in half and top with some cheesy eggs, bacon and chopped chives then add the top half of the biscuits.
