- 14 Medjool Dates
- 2 Tablespoons Almond Butter
- 0.25 cup Dark Chocolate Chunks
- 1 Tablespoon, choped Goji Berries
- 0.5 teaspoon Maldon Sea Salt
Directions
Sweet and soft almond butter stuffed dates topped with vibrant goji berries, melted chocolate and flaky salt!
When the sweet tooth strikes, makes these stuffed dates.
I prefer filling my dates with homemade almond butter over peanut butter as it’s not as thick, perfectly nutty and slightly sweet!
You can use any nut or seed butter that you have on hand or like!
For that perfect sweet bite, we need a chocolate aspect. Melted chocolate is not only visually stunning but it works so well with the other flavors.
Go with a high-quality dark chocolate that you can melt in the microwave or over a double boiler.
For a pop of color and a hint of tart, I love chopping up goji berries and sprinkle them on top.
Goji berries are a superfood and have numerous health benefits including immune system support, promoting healthy skin, stabilizing blood sugar, and improving anxiety and sleep!
Lastly but certainly not least – flakey sea salt. Maldon is my preferred flakey salt but even a tiny pinch of sea salt will do the trick!
Salt not only balances but enhances all flavors.
When buying dates, look for plump and soft dates. Medjool dates are very common in grocery stores and always a great choice!
Steps
1 Done | Quick PrepFirst, start by melting the chocolate. You can do so over a double boiler or in the microwave. I prefer using the double boiler method as it reduces the risk of burning the chocolate. Grab a sauce pot and fill it with 2 inches of water. Place a large heat proof bowl on top of the pot, making sure that the bottom of the bowl does not touch the water. Turn the heat to high and add the chocolate chunks to the bowl. The steam from the hot water will melt the chocolate. Stir occasionally and once the chocolate is almost fully melted, turn off the heat and carefully set the bowl on a kitchen towel on the countertop. Continue to stir until fully melted. If you want to use the microwave, place the chocolate chunks inside a heat proof jar or bowl then microwave in 20 second increments, stirring each time. With this little amount of chocolate, it should be fully melted after 30-40 seconds. Keep in mind that even if the chocolate is not fully melted and you still see chunks, the heat remaining in your bowl or jar will continue to melt as you mix. If your dates have pits, gently slice lengthwise to remove the pit but do not slice all the way through as you want to dates to stay whole. Once the pits are removed, gently push the sides apart to make room for the almond butter. Lastly, chop the goji berries if desired. |
2 Done | Stuff The DatesStart by spooning in a bit of almond butter then place the dates on a plate or serving platter. Next, sprinkle the stuffed dates with goji berries then drizzle with chocolate and lastly sprinkle with maldon sea salt. You can store any leftovers in an air-tight container on your kitchen counter or in the refrigerator for up to 3 days. I prefer keeping mine on the counter so the dates stay nice and soft! |

I love dates on their own or with peanut butter but your version is so much better! You created my new favorite dessert.
Medjool dates are my absolute fav and this recipe is SO DELISH. Will definitely be making again to keep around to tame my sweet tooth throughout the day.
