Ingredients

3 cups Old Fashioned Oats
1 cup, chopped Almonds
1/2 cup Unsweetened Shredded Coconut
1/4 cup Chia Seeds
1/4 cup Pumpkin Seeds
1 tsp Ground Cinnamon
1/2 tsp Ground Cardamom optional
5 tbsp Virgin Coconut Oil
5 tbsp Honey/Maple Syrup

    Growing up we ate a lot of cereal, not only for breakfast but as a snack and even dinner…when mom wasn’t home or did not feel like cooking haha. Cereal is yum but contains a lot of sugar…refined sugar which we all know is not healthy at all. Granola is a great alternative and it’s even better if you make it yourself!

    Prep Almonds & Liquids

    Start by chopping the almonds in a food processor by pulsing a few times. You can also buy sliced almonds to make it easier!

    Get a small sauce pot and heat up the coconut oil and honey until it has melted.

    Combine Dry & Wet Ingredients

    In a big bowl, combine the oats, chopped/sliced almonds, chia seeds, pumpkin seeds, shredded coconut, cinnamon, and cardamom. Mix the dry ingredients then pour over the melted coconut oil and honey mixture. Mix well then spread on a parchment lined baking sheet.

    Bake

    Bake at 300F for 25-35 minutes until it is golden brown. Stir the granola once after about 15 minutes to ensure even toasting.

    Keep the granola in an air tight container in your pantry for up to 7 days. I enjoy my granola with almond milk, fruit and yogurt!
