Bircher Muesli Overnight Oats

Growing up, I remember going to fancy brunch restaurants and always hoping Bircher Muesli would be on the menu. Back then I had no idea what I was actually eating. I just knew I loved it!

Now, that I work on developing recipes all the time, I think I finally figured it out!

This is my version – which is somewhat similar to the authentic Swiss style Bircher Muesli! And it turns out, it’s basically overnight oats!

Get a Bowl

To your bowl, add the oats, chopped almonds, ground flaxseed, raisins, cinnamon and give it a stir.

In a separate bowl or jar, add the kefir and ample syrup and mix to combine.

Wash your apple and grate with the skin on. Right underneath the skin of the apple is where all of the good nutrition is hiding. Add a squeeze of lemon juice to the grated apple so it does not brown (this is optional).

To your bowl of oat mixture, add your kefir mixture, grated apple and mix to combine.

Scoop into Jars

Scoop your bircher muesli into 2 jars and seal with a lid. Store in the refrigerator for at least an hour, up to overnight. The longer your bircher muesli sits, the better it will taste!

I recommend topping with berries and some mint and enjoy!
